On Plan Banana Protein Pancakes

35 grams oats

3 egg whites

15 grams buybulkwhey protein powder

32.5 raw banana

2-3 grams sugar-free, fat free banana creme pudding mix

dash of cinnamon

Stevia to taste

Heat skillet to 350 and pour batter on to skillet. When bubble "pop" flip pancakes to cook other side.

This will make about 3 large pancakes or 4-5 smaller ones.

Oatmeal Pancakes and Buttermilk Syrup

My dear friend Karalee shared this recipe with me a couple years ago. Tried it for the first time this Sunday morning. I was a little worried about the batter and unsure about how these would turn out. But they turned out great! Weston said he couldn't really compare these to anything else cause they are in a category of their own. He said they were very hearty, filling, and had an enjoyable flavor. I thought these would be great for a hikers snack.

2 c rolled oats, not instant
2 1/2 c buttermilk, 1/2 c reserved for syrup
2 eggs
1/4 c butter, softened
2 T granulated sugar
1 t baking powder
1 t baking soda
1 T cinnamon
1 t salt
1/4 c almond meal (optional...I used this and I think it adds a little bit of needed protein to this breakfast)
Buttermilk Syrup, below

In a large bowl mix oatmeal and 2 cups of buttermilk. Refrigerate overnight. Mix in eggs, butter, sugar, baking powder, baking soda, cinnamon, salt, and almond meal. Using a 1/4 c pour batter into hot griddle. Flip pancake when edges are dry and middle is bubbling. Cook until edges are brown.

Buttermilk Syrup
1 c granulated sugar
1 stick or 1/2 c butter
1/2 c buttermilk
1 t vanilla
1/2 t baking soda

In sauce pan combine sugar, butter, and 1/2 c buttermilk. bring to a boil. Then remove from heat. Add vanilla and baking soda. Stir and serve over pancakes.

Feeds 4 to 8.

PS. Jenny G.-I thought of you when making these...you can make cakes a little healthier by substituting agave or stevia for the sugar. Applesauce in place of half of the butter or all of it...:)
